I’ve been making sweet potato curries for years and I would personally ‘tandoori’ the potato first. Bake it in the oven in oil yoghurt and herbs till it’s nice and crispy. Then immerse it in your sauce which you’ve had simmering thr whole time.
Also basil would be awful in this. And cayenne is questionable. But I love the lentils.

Ugh throwing onions into the pan, then olive oil on top? This might be a good recipe but these videos bother me when they blatantly show poor technique

Just as a little heads up to vegans: Many red curry pastes contain dried shrimp powder and other seafood stuff so it’s worth it to look at the ingredients before buying it.
That probably smells wonderful. Looks nice and easy too.
